
My last Misfits Market box brought me an abundance of cucumbers. No seriously, I got about 6 absolutely gigantic cucumbers. I love cukes as much as the next person, but after the 4th one it's time to get creative!
To turn practically any veggie into noodles, you will need a spiralizer. I got mine on Amazon for around $25. I remember when "Zoodles" were all the rave because they are a low-carb alternative to pasta. Good times, good times.
In addition to the spicy tuna, I tossed the cucumbers in a quick dressing that consisted of 1 tbsp white vinegar, 2 tsp sesame oil, 1/4 tsp ground ginger and a dash of garlic powder. If you don't have a spiralizer, you can just cut the cucumbers however you want. Here's what you'll need to make this recipe.
Ingredients:
1 can tuna fish (or you can use fresh tuna)
1 cucumber
1/2 a carrot (or the whole carrot, up to you)
2 heaping tbsp Mayo
2-3 tsp sriracha (spice to your liking)
1/2 tsp paprika
1/2 tsp chili powder
1/4 tsp garlic
A dash of salt
sesame seeds & scallions to garnish
Instructions:
Step 1: In a small bowl, combine tuna, mayo, paprika, chili powder, garlic and salt until well blended. Set aside.
Step 2: Using your spiralizer (or other preferred method), prepare your cucumber and your carrot.es cucumbers
Stel 3: Combine ingredients mentioned above for salad dressing.
Step 4: Toss the cucumber and carrot in the salad dressing and top with spicy tuna. Step 5: Garnish with sesame seeds and scallions.
