Cherry, Goat Cheese & Balsamic Chicken Salad with Toasted Pecans

Happy New Year! I decided to start the blog off with a fresh new recipe that includes a modest spin on a classic favorite. Goat cheese pairs well with so many different fruits. Typically I add strawberries, blueberries, raspberries, pears or apples but there are endless possibilities. The tang or funk of the goat cheese combined with the sweetness of fruit is a pair likely made by the gods. So why not throw cherries into the mix?


The goal of this blog post is more about promoting the flow of ideas than it is about posting a "recipe" because let's face it, there are very few things that are complicated about making a salad. My goal this year is to really think outside the box, and encourage others to do the same. While a salad isn't really "out of the box", we're just gonna roll with it. In hindsight, I definitely could have added some quinoa to this. Maybe next time!

And now that I've planted this seed, I want you to come up with a unique combo you've never tried before that will bring excitement to your palette and really jazz up your salad. You can take the goat cheese idea and run with it, or you could choose another ingredient to focus on. What I love about food so much is the possibilities are endless, and recipes can be catered to your tastes, preferences and dietary needs.


Here are the ingredients for the salad:


Salad Ingredients:

Mixed lettuce

Goat Cheese

Cherries

Toasted Pecans

Balsamic Chicken


While I don't need to outline how to make a salad, I will say I marinated the chicken in balsamic dressing for about 48 hours but that's really the only instruction for the salad. I did toast the pecans which requires heating the pecans over medium heat in a dry pan until they're warm and toasty.
